When I heard the sirens, then saw the fire truck pull up first on the scene, the relief was huge. I knew we were going to be OK — and thankfully, we all were.

At Coco’s, a bad day looks like multiple people calling in sick, wait times stretching out to uncomfortable levels, and then your ring-in waiter tells you they forgot an order. We smile, juggle, apologise, and make it through.

A really bad day is the bar flooding or a power cut — or both on the same night. We splash our way through service, stop recommending cocktails, grab the candles, laugh it off tableside as “memorable” and “romantic”, and probably still get a great tip and a pat on the back for pushing through under pressure.

But when equipment fails for Fire & Emergency — and it is failing — the stakes are completely different. It can mean someone might not make it home.

Fire and Emergency show up for people on their worst days, yet the conditions they’re working under are complete bu****it. Outdated gear, broken equipment, lack of support…
