Grilled Fish with Steamed Tomatoes & Soy Sauce
Growing up, my Lola Rosa would slip tomatoes into the rice cooker to steam alongside the rice. Once softened, she’d macerate them with a splash of soy sauce and serve them with freshly cooked rice and fish.
It’s the kind of Filipino food you rarely find in restaurants—simple, humble, and deeply comforting. A meal built from everyday ingredients, yet rich with memory and meaning.

Asin Tibuok
A rare and traditional salt from Bohol, Philippines—crafted through a slow, almost ritual-like process passed down for generations.
It begins with coconut husks soaked in seawater for weeks, allowing them to absorb the salt. These are then dried under the sun for several months (typically around 2–3 months) until fully cured. Once ready, the husks are carefully burned into ash.
The ash is placed in a funnel-like filter (sag-ong), where seawater is poured through it multiple times to extract a highly concentrated brine, known as tasik.
This brine is transferred into a clay pot and slowly boiled over fire for hours—sometimes an entire day. As the liquid evaporates, salt crystals gradually form and solidify inside the pot. Eventually, the pot is cracked open to reveal a dense, dome-shaped salt—asin tibuok.
