Thanks to Love Soup Hibiscus Coast and the incredible volunteers that turned up to help me on the day,it was my privilege that we prepared, cooked and served community dinner in the Whangaparaoa Hall.I had Asian coleslaw salad,four bean salad with roasted corn,paprika, red onions and fresh herbs,greek salad with spinach leaves and pomegranate seeds,kumara and potato purée with roasted onions and garlic,roasted veggies,lamb shanks,roasted chicken,pork ribs and stuffed squid with bacon rice garlic and onions.We had yummy deserts too ❤️

Purée is in my books, one of healthiest side, to and dish at any time of the year with any protein you love.
I made parsnip and kumara garlic purée today as they are in season and just gorgeous 😍

Here it is I cooked it for two and there will be leftovers.
Salt and water in a pot just enough to cover the beauties.
Peal them, I used 4 medium size parsnips 2 small kumara as I wanted the parsnip to be the leader here.
Chop 5 garlic glove’s nicely(ooohhh yeah baby) when veggies cooked take all water out,throw in 100g butter(we love butter) and add little and small amount of milk (maybe 100ml max).Chuck in the chopped garlic,take out the potato masher and get in to it.Make sure everything comes together nicely and is smooth.Ad some more milk if you want, but DONT MAKE TOO WATERY.Chop some herbs (I am fine chopping oregano as the purée is going with fish for lunch and I think oregano is yum with fish) up to what protein you having with it (thime goes yum with pork rosemary with lamb) Try it season accordingly with salt and black pepper GET IN TO IT AND DIG IN!!!Enjoy it 😍❤️
