Turns out some of our menu favourites quite literally started in Scott's dreams...
Inspiration at Mexico can come from anywhere. Something spotted overseas, a dish tried once and never forgotten, what's happening online, or an idea that just refuses to leave your head.
Then comes the fun part: turning that idea into something worthy of the Mexico menu.
Let's just say we're very glad Scott followed through on the churro cheesecake dream 😴

Meet Scott - the man behind the menu 🧑🍳
As Mexico's Executive Chef, Scott is always working on what's next, from new seasonal dishes and sharing plates, to fresh marg flavours and house-made sodas.
There's always plenty happening behind the scenes, but let's just say that right now, one particular creation is already causing a bit of debate. We won't give too much away just yet, but if you like a margarita and you're feeling adventurous, you're going to want to watch this space...
Big flavours, a lot of experimentation, and plenty of taste testing - all in a day's work.

Over the weekend we celebrated International Beer Day, so today we're raising a glass to the newest additions behind the bar. 🍻
We've teamed up with Colab Brewing to bring six craft beers to selected Mexico locations, with a fresh lineup pouring straight from the taps.
From spicy margaritas to crisp lagers, the bar is looking pretty good right now.

Here we go again..... 😫 From midday today we head into a version of Lockdown 2.0 across the country. The good news is that we’re now used to this kinda thing, and we know that with everyone doing their bit we can get through to the other side (again).
For our Sylvia Park amigos, we’re temporarily closed. Many of our other Auckland stores are still open for your Fried Chicken fix under Level 3 Guidelines, with contactless delivery and click and collect available via our website and Love Mexico app. Check our website for opening hours for your local Mexico. 🌮

To reach the Mexican restaurant at Mt Wellington Highway in Auckland via public transport, you can take a train or a bus to Sylvia Park Station. From there, it's a short walk to the restaurant.
If you're driving, head towards Mt Wellington and look for signs pointing you to Sylvia Park. The restaurant is situated at the mall complex adjacent to the highway. There is ample parking available in the mall's multi-level carpark.
