Pumpkin rolls in cinnamon sugar....a little bit of inspiration to include pureed veggies into your bread dough. Nice plump sweet and yellow pumpkin giving all the natural hugs. It has some added spices from the paratha mix to mask the strong pumpkin flavour and a little bit of cinnamon sugar to roll it out and then bake!!!

A simple father's day bake.
It's a brownie cookie pie...a healthy indulgent take on this recipe. Made entirely from inhouse millet blend and yes it really did surprise me. I could hear so many oomphs and aahhs from the people who tasted it!!
I love how a simple blend of ingredients can transform to something so beautiful yet so soulful. This one was an experimental bake no weighing, no script, just an idea of how it should feel like...just go with the flow and feel of the dough.
Trying my best to include a variety of grains in my baking. Surely the millets didn't disappoint. Actually they taste soo good, never going back again. Why should wheat have all the fun!!!

Korean cream cheese garlic buns, it is!!
Mild sweet brioche buns, filled with cream cheese filling and dipped in garlic butter. Twice baked giving it a nice soft interior and crisp outer layer.

Completely gluten free millet brownies. I am not exaggerating as this was the last tiny piece I got to click after baking a big batch. So fudgy and addictive these were. It was one of those experimental days when I want to be innovative. Credit goes to all the foodie accounts I binge watch!!
A little about the star ingredient here, Jowar flour or sorghum. I love how jowar flour imparts a unique taste and texture to baked goods. And yes it's one of those kitchen staples which I cannot live without. You get it in different forms here. Available as a whole grain which makes excellent crispy dosas or as a substitute to rice, you get coarse grits which makes really amazing upma or soft porridge and then the flour which making amazing bread, cookies and crackers.

A sourdough sandwich loaf. It looks like a normal slice, but it really exceeded all my expectations!!
So it all started with soaking up some purple and brown wheat berries and few teaspoons of whole bajra. Washed and soaked. Drained and ground to a thick batter. Rest added sourdough starter, salt, wholemeal flour and waited for the magic to happen.
It took me two days from soaking, shaping to baking. But it was all worth the wait.
If you are in Auckland and looking to experiment with some healthy flours, my go to place is Bulk Food Savings . Do check them out. They have pretty decent stock of so many interesting flours. This is not a paid promotion !! Just a baker learning to find your baking things in a new place. I miss some things, but also I am in awe of the new things I get to try.

These were some nostalgic scrumptious egg puffs made by my dear friend as part of our final fundraiser at the AMHS badminton club. So happy, we could collect more than what we aimed for. Also previleged by the kindness and warmth of all the members of the club who came forward to buy the goodies that a small team put forwarded.
Just a small gesture to support and give a little back to the places that matter the most. To all the amazing people who work at Starship Hospital.

Thandai cookies. Clicked it randomly before packing. But didn't post it on my page for some reason. Thought it needs an intro.
Thandai is prepared with a mixture of almonds, cashews, fennel seeds, melon seeds, rose petals, black pepper corns, poppy seeds, cardamom, saffron all dry roasted and blended. It can be enjoyed as a drink or as a cookie. It's a summer cooler drink and regarded as a protein drink if you see the ingredient list.
Just thought of sharing here, if you are bored of your protein drink and decide you need a new flavour. It's a nice a gentle flavour and you can actually make them in no time. It stores beautifully in an airtight jar. Comment recipe and I can share how I made it.

Some snaps of what we baked for the sale and my gang of happy to help anytime.
First so happy to all the people who came and popped in to say hi and for all your generous donations. We are moving closer to our pledged goal!!!
These are just some of the pics, couldn't click so many of the moments because we are a small team, and it was crazy busy to squeeze in all the items we planned. Well I have to admit my planning wasn't that great. But yes I did try my best.
So we are having some more items for grabs as part of the fundraising, so don't worry if you missed this one!!!

As I said some random behind the scenes pictures.
First pic of how our homemade mascarpone turned out to be. It was good, but yeah my first batch of the filling curdled, but then had to do the second batch. I was so so in a rush to churn them. So hot tip from this is just be gentle while you fold the cheese to custard base. Yeah, I did relearn my lesson, and the second batch turned up yumm. But we could just take a few for the bake sale.
Second pic is the bts of our signature orange cookies. I always believed food should be naturally coloured and flavoured. It's a bit of work to peel oranges and scrape the skin without the white and blend them with sugar, so you get all the essential oils and of course the flavour and if lucky bite into those beautiful rind mixed all through the cookies.
The last pic is the beautiful hue of the base of our cookies. It's always made with butter and sugar. Since it's orange cookies,it has lots of orange rind giving it this beautiful hue. And yes, I was lucky to get my hands on some homegrown oranges.

Ok so this is me just scribbling the prep towards this bake sale. Hope it's helpful to someone, somewhere!!!
Today brought all stuff needed and stock took of possible things needed.
Tonight making mascarpone cheese, because the last time I brought them I didn't like the taste and it was too runny. So, let's make it from scratch. Just make it ahead so it has time to ripen and set properly.
By the way, I already made my batch of candied lemon to go on top of my lemon loaf. Thank you to my friend who generously donated her organic lemons.

Here's me challenging my limits, that's what I like to do. Excited and nervous at the same time!!
This June hoping to do all of this and more with all your support, hoping that this month is gonna smell heavenly just like the smell of fresh bakes!!!
