As promised here is the complete recipe for my chocolate avocado cream pie, as read out on Rex Simpsons radio show last week. Enjoy!!!!!
Ingredients
Choocolate crust - 20 cm/ 8 inches pan
1 1/3 cup Almonds raw, unsalted, roasted or unroasted
1/2 cup Desiccated coconut unsweetened
2 tablespoons Unsweetened cocoa powder
1/3 cup + 1 tablespoon Maple syrup or sugar free monk fruit syrup (if keto) or brown rice syrup or agave syrup
1 tablespoon Coconut oil melted

Chocolate avocado mousse
1 cup Avocado about 2 large avocados
1/3 cup Almond milk unsweetened or unsweetened coconut milk
1/3 cup + 1 tbsp cocoa powder
1/3 cup + 2 tablespoons Maple syrup or sugar free monk fruit syrup (if keto) or brown rice syrup or agave syrup
3 tablespoons Coconut oil melted

Instructions
Prepare the no bake chocolate crust
In a food processor with the S blade attachment, add all the dry ingredients: raw almonds, desiccated coconut, and cocoa powder. Blend for 30 seconds until the almonds turn into a thick meal.
Stop the blender and pour in maple syrup and melted coconut oil.
Blend again to form a sticky dough. It should be sticky enough to form a crust. If too dry adjust adding 1 tbsp of water and blend again.
Press in the crust into a loose bottom pie pan, 20 cm (8 inches). Press the dough until it covers all the pan, including the sides.
Place the pie pan into the fridge to set.

Chocolate avocado mousse
Scoop out avocado flesh from a ripe avocado and remove any black spot from the flesh that may bring bitterness to your mousse.
Measure 1 cup packed avocado flesh (or weight 240g, 8.5 oz).
In the same food processor (no need to clean the bowl!) or in a blender add the avocado flesh, maple syrup, cocoa powder, unsweetened almond milk, and melted coconut oil.
Blend until it forms a shiny consistent chocolate mousse. If needed, stop the food processor, scrape down the sides and blend again until smooth and no bites of avocado are left.
Pour the chocolate mousse into the prepared no-bake chocolate crust.

Refrigerate at least 4 hours before serving

Storage and freezing
You can make ahead the pie and freeze! Simply defrost in the fridge the day before serving.
Store 3 days in the fridge.

Dear friends of the Tea Rose. It’s been a fun three months hosting you in our delightful Tea Rooms in Grahamstown!!
We’ve loved every minute and are so proud of what we managed to achieve over such a short space in time. We’ve been told Best Breakfasts in New Zealand (not once but twice!) we’ve got to know our community better and best of all it gave us hope when the Lockdowns happened and all our catering disappeared overnight(s). It’s bittersweet to have to advise that we can no longer continue on as a cafe. The catering has taken off again, busier than ever, and Jennifer’s retreats (that she loves catering for around New Zealand) have picked up again. This week she’s been in Rotorua catering for a couples retreat and today she heads up to Leigh to cater a Vegan Camp for some Auckland Uni PHD students. This type of work really fills her soul and while she wishes there were another few hours in each day, she also recognises that health and down time are also important, and so the decision is made.
Damon and Jane who have been the superstars fronting the cafe will continue to work for Aroha Catering, you might be lucky to see the fabulous Damon at our busy Saturday market stall,where you can continue to pick up your favourite Aroha treats and staples. We’re happy to take orders for our delicious homemade bread, cakes, flans and tarts and we know you love our sausage rolls so much we promise to keep baking our hearts out!
Thanks again to all you lovely supporters who chose the Tea Rose as your favourite port of call. Your support was noticed and appreciated more than you know. We look forward to hosting you at a private dinner party, high tea or any other small celebration you’d like to hold in our gorgeous space, there’s magic behind that pink door 😉
