There’s always a moment when the table shifts.

Everyone’s meal arrives. A butter chicken here. A lamb rogan josh there. Someone’s ordered the biryani. Someone else went for the paneer. For a brief second, it looks like everyone has their own.

And then it begins.

Just try a spoonful of this. Tear off a bit of naan and pass it over. Slide that bowl closer. Suddenly the curries aren’t sitting neatly in front of anyone. They’ve made their way to the centre, where all good things seem to end up.

That’s the magic of a Little India table.

In our kitchens, spices have always meant more than flavour.

There’s something about cooking over fire that feels older than memory.

In our family home in Punjab, the tandoor was never just a piece of equipment. It sat outside in the courtyard, fired by charcoal when it was time to cook. Dough pressed by hand and placed against the clay walls. The glow of the coals. The quiet pause before the bread was lifted out, warm and ready to be shared.

We still cook this way.

Not because it’s different. Not because it’s complicated. But because fire gives flavour in a way nothing else quite can. It gives naan its gentle char. It gives meats their depth. It brings a soft smokiness that settles into curries and lingers at the table.

More than that, it carries lineage.

Our head chefs were trained in our grandmother Premjit Kaur Gill’s kitchen in Chandigarh. The same care she gave to her family is the care that lives in our tandoors today. It isn’t rushed. It isn’t reinvented. It’s done the way it was taught.

When naan arrives at your table, warm and ready to tear, you’re tasting more than bread. You’re tasting something passed from hands to hands, across generations and oceans.

Before there was a restaurant, there was a kitchen in Chandigarh.

Not a big one. Just a family kitchen, where spices were measured by instinct and recipes weren’t written down because they didn’t need to be. Our grandmother, Premjit Kaur Gill, cooked the way she’d been taught, tasting as she went, adjusting by feel, feeding whoever was at the table.

That’s where it began.

When our head chefs trained with her, it wasn’t just about learning dishes. It was about understanding care. How long to let something simmer. When the dough was ready without looking at a clock. How food should feel before it ever reaches the plate.

Those recipes travelled far. Across oceans. Into a small New Zealand kitchen in 1991. And from there, into dining rooms all over the country.

When you sit down at Little India, what’s in front of you didn’t start on a menu. It started in someone’s home. In hands that cooked for family first. In a kitchen where feeding people was an act of love, not a transaction.

That’s the thread that runs from Chandigarh to your table.

For many of our guests, butter chicken was the first curry they ordered at Little India. The one a friend insisted on. The one a parent chose for the family. The one you came back for the next time, just to make sure it tasted the same.

It’s more than a favourite. It’s the dish you recommend when someone’s new to the table. The one you order without overthinking. The one that feels right on a cold night, after a long day, when you want something familiar and steady in front of you.

We’ve seen it introduced to partners, to flatmates, to children who grow up and order it themselves. We’ve watched it sit in the centre while naan’s torn and stories are told. It’s part of more dinners than we could count.

One of our incredible chefs is heading back to India for some much deserved family time so from Monday 6 April, Little India Glen Eden will be closed on Mondays until further notice.

When the Gill family arrived in New Zealand, they carried more than luggage with them.

They carried recipes. The kind learned quietly at home, standing beside your mother in the kitchen. The kind you cook by instinct, guided by memory rather than a page.

In the beginning it was simple. Food prepared in a small upstairs kitchen and shared with the community below. The flavours of home, served to anyone who came through the door.

People returned. Then they brought friends. And slowly, a small kitchen turned into something much bigger than anyone expected.

Everything starts in the tandoor. A traditional clay pot, fired with charcoal, giving our meats and naan their depth of flavour and setting the tone for the dishes that follow. It’s the foundation of our kitchen and the reason our curries and biryanis have the warmth and richness people keep coming back for.

We don’t add sugar. We don’t use MSG or thickeners. Just spices, time and the kind of care that lets the ingredients speak for themselves.
