How do you like our new signage?
A good customer of ours pointed out that the old signage was out of date as we are doing a lot more than Cornish pasties and Melton mowbray pork pies.
Thanks for the heads up good customer 👍.
You can also see our new Deli sandwiche menu we are using our homemade bread, ham, pates, terrines, cheeses imported from all over the world and our fresh salads.
A shout out to Shaun and his team from NZ SIGN SOLUTIONS and the guys at PENINSULA PRINTING 👏.

Now this is what happens when one chef makes a mayonnaise on a high speed level using the mixing machine and doesn't lower the speed level after finishing the mayonnaise and then another chef comes along to make shortcrust pastry and doesn't check the speed level on the mixing machine.
Maybe too many cooks!!!
Apart from the fun and frolic behind the kitchen door, we have been busy making new batches of Cornish pasties, Melton mowbray pork pies, cheese, onion and potato pasties, homemade bacon and even some home roasted Brazilian arabica coffee beans.

We had new arrivals for The Kitchen Deli this week.
A tasty Duch massdam cheese and an aged Gouda.

Anyone for a Melton mowbray pork pie or maybe a pack of our homemade bacon?
One of my customers said that they experienced an amazing licorice icecream while visiting the south island and could we put it on the menu.
So just off the deployment kitchen table, our new icecream, LICORICE ICECREAM.

So behind The kitchen Door this week we have been doing some R and D (research and development).
Because our homemade bacon which is dry cured for 14 days in celery salt and sugar with no nasty artificial nitrites and then cold smoked for 3 hours using an applewood chips has proven so popular, we have lots of pork skins in the kitchen.
So of course, we got to put them to good use and of course PORK CRACKLING the obvious answer. Another experiment, LICORICE ICECREAM. Let me know if you would buy one?😉.

The Scotch Egg story is thought to go like this. The exclusive London provisioner Fortnum & Mason claims to have invented it as a portable snack for rich coach travellers in 1738. The eggs would have been smaller in these days. They would have been made using bantam’s eggs rather than hen’s eggs. The meat would have been gamier, like a strong Victorian pate.
Apparently it is more likely that it was a northern variant of our old friend The Cornish Pasty, produced by Scottish smallholders who would have kept chickens and pigs.
These days the humble Scotch Egg can be seen on Michelin-stared pub menus such as Heston Blumenthal’s The Hinds Head in Bray, Berkshire, England. It also can be seen closer to home on The Kitchen Door menu. We use a home-made sausage meat which has shoulder of minced pork (no nitrates or nasty chemical like MSG used here!), sage from our herb garden, sauteed with onion with a few light spices with which we wrap the softly boiled free range eggs, finally egg and bread crumb with which we use our home baked bread for the crumbs and then deep fried. Job done. Enjoy.
