A Parisian bistro staple, œuf mayo is simply hard-boiled eggs coated with seasoned mayonnaise, but it’s so beloved in France that it has a society to protect it - Association de sauvegarde de l’oeuf mayonnaise. We’re here for it.

It’s a perfect snack with some sourdough, especially with Ortiz anchovies draped over the top. Bound to be polarising amongst the egg haters out there, but give it a chance and you may be surprised 🥚
