Clevedon Strawberries Jam Drops 🍓
These buttery little biscuits are perfect to whip up for afternoon tea! Quick, simple and very hard to stop at one.
Ingredients
130g butter, softened
125g caster sugar
1tsp vanilla extract
1 egg
1 and 3/4 cups plain flour
Pinch of salt
1/2 Clevedon Strawberries strawberry jam
Icing sugar, for dusting
Method
1. Preheat the oven to 160°C bake and line two biscuit baking trays with baking paper.
2. Beat the butter, caster sugar and vanilla until creamy.
3. Add the egg and beat till well combined.
4. Gradually mix in the flour and salt until dough is firm.
5. Roll the dough into balls approximately 3-4cm wide and place them on the trays, leaving room between each one.
6. Flatten each ball slightly, and use your thumb to make a small hollow in the centre for the jam.
7. Bake for 10 to 15 minutes, or until lightly golden. While still warm, gently press the hollows down again if needed.
8. Transfer to a wire rack and leave to cool completely.
9. Dust lightly with icing sugar, and a light sprinkle of pink sea salt if desired, then spoon Clevedon Strawberries Strawberry Jam into the centre of each biscuit.
Store in an airtight container, assuming they last that long!
